One of the first recipes I tried when I started looking at the Paleo diet was Coconut Flour pancakes. I am a big breakfast guy and I am always looking for different thing to eat in the morning. You can can't eat scrambled eggs every day!
I found this recipe on the Paleo Hacks website written by Rebecca Maclary, Paleo Hacks. I modified the recipe a little by adding blueberries. I have also added crushed bananas to this recipe for something different. The pancakes turn out fluffy and fill you up. I can eat a whole stack and not feel the bloat as well. Yea for grain Free!! Ingredients
- 3 Eggs
- 2 tablespoons Organic, Cold-Pressed Coconut Oil
- 2 tablespoons Organic Raw Honey
- 1/4 cup Coconut Milk
- 1/2 teaspoon Pure Vanilla Extract
- 1/4 cup Organic Coconut Flour
- 1/8 teaspoon Baking Soda
- Pinch of salt
- 1 cup Fresh Blueberries
- Organic Cooking Spray or Gee for Cooking
- Organic Maple Syrup to Taste
Instructions
- Mix the eggs, coconut oil, and honey together in a mixing bowel.
- Add the coconut milk and vanilla extract. Mix well.
- Next add the coconut flour, baking soda, and salt. Mix lightly.
- Gently stir in the blueberries.
- Spray pan with organic pam, or melt some gee. Then add a little batter at a time to the pan.
- Regularly check the underside of your pancake before flipping. The pancakes will not bubble like their wheat cousins.
- Add a little maple syrup (or a lot!) and enjoy the pancakes while they are still hot!
